Red Grape, Raisin & Broccoli Salad

Summer eating = easy salads and dining outside! This is a lighter take on a classic picnic salad using yogurt instead of mayonnaise and packed with iron and fiber. Topped with toasty pepitas? You betcha! It's delicious.

Ingredients:

2 heads of fresh broccoli

1 small red onion, finely chopped

1 1/4 cups raisins

Generous 1/2 cup sunflower seeds, toasted

 1 cup plain full-fat yoghurt

1/2 tsp sea salt

Fresh cracked black peppers

Directions: 

Separate the broccoli florets from the stalk and cut them into smaller, bite-sized pieces. Cut the remaining stalk in half and finely slice. Place in a serving bowl, together with the onion, raisins and sunflower seeds. Toss to combine. Add the yoghurt, salt and pepper and season to taste. Use your hands to mix together until all ingredients are coated in yoghurt.
